Ingredients

4 large Sweet potatoes
2 tb Rosemary; minced
2 tb Garlic
1/2 tsp Salt
1/2 tsp Pepper
2 1/2 tsp Extra Virgin Olive Oil

Preparation

Scrub potatoes well. Put in large pot with enough water to cover by a couple inches. Boil till barely tender, about 15 mins. Put in colander and let stand till cool enough to handle. Peel and slice about 1 ince from each end and discard. Slice into 1-inch rounds.

Adjust oven rack to center and preheat to 450?. Grease bottom of cookie sheet with Pam. Arrange slices in a single layer, spacing about an inch apart.

Combine remaining ingedients in a small bowl. Spoon about half teaspoon of the mixture on each slice and spread with a small spatula. Bake until tender and slightly crusty on top, about 35 mins. Serve immediately.

Finished product, with Parsley Chicken and broccoli with cheese sauce. they were delicious even though I cooked them a bit too long. the dark parts carmelized instead of burned. tasty! photo by annmartinson annmartinson

These were outstanding! Moist and flavorful and oh so easy.

These were da bomb! I boiled them a little too long so they didn't crisp up quite as much as the should have in the oven, but they were still delicious. Both of my kids said these sweet potatoes were the best part of tonight's meal.

I made this as a side Xmas dinner. We are big fans of yams but thought we'd try something different. Different it was. And delicious!

I had the yams pre-cooked, so my times don't reflect that my yams were cooked and cooled in advance. I peeled then sliced 3/4' thick. I put all ingredients in the blender to get a smooth rosemary finish. I didn't think it would be enough but it was perfect. and they are DELICIOUS!
