Cubed Steak with Tomato & Bell Pepper Sauce
Add flour and seasoning to casserole dish. Mix well.
Heat frying pan over medium high heat and add 1 tablespoon of oil. While pan is heating, dredge steaks in flour mixture. When oil is hot, add steaks and sear each side quickly until just brown. Remove.
Add remaining oil and about 2 tablespoons of flour mixture to form a roue. Cook for a few minutes to remove floury taste. Add stewed tomatoes including all juices to roue and whisk until incorporated. may be necessary to add a bit of water to thin if gravy gets too thick. Nestle steaks back into gravy, reduce heat and simmer.
While simmering, seed and devein bell peppers and slice into 1/4 in rounds or half rounds. Place on top of steaks about 10 minutes before removing from heat so they maintain some crunch.
Serve over rice.
