My sister-in-law's recipe
Prepare the two pots of coffee and cool down in soup bowl;
Break the eggs: separate the whites (into a large salad bowl) and the yolks (also into a large bowl);
Blend the yolks with the sugar; beat. Add the mascarpone and beat again;
Beat the egg whites until firm (either with a robot or TWO people beating in turn). Add slowly into the yolk/mascarpone mix and fold in;
Soak the biscuits into the coffee one by one and place at the bottom of oval dish; add one layer of cream (1/2 of total); place a second layer of soaked biscuits and the rest of the cream;
Place in the fridge with a lid on for 24 HOURS.
Add coco just before serving.
