Szechuan Pickled Vegetable ('Zha Cai') is a delicious and versatile ingredient which can be used in everything from stir-frys, to noodle soups, and as a condiment over cold tofu & thousand year old eggs, wontons in chili oil and congee (rice porridge). This "pickle" is essentially the swollen stem of a type of mustard plant that is salted, rubbed in chili spices, pressed and then preserved (traditionally in some type of earthenware jar). Rather than having to prepare your own mustard root, you can buy these in convenient packages, with some already julienned, canned. It is sometimes found in the refrigerated sections of many Asian markets. You might want to tone down the pungently salty and spicy flavor of this veggie by giving it a quick rinse and soak before using. Zha Cai with shredded pork is great served plain or with Chinese flour noodles.
Mix together the Pork Marinade ingredients and set aside while chopping the vegetables.
I like the hot and salty of the canned Szechuan Preserved/Pickled Vegetable (Zha Cai), but you can rinse it to reduce the heat and salt levels.
Heat the sesame oil, and then quickly stir-fry the pork until you get a little brown.
Add the garlic and ginger and start those cooking.
Add the Szechuan Preserved/Pickled Vegetable (Zha Cai) and the Napa cabbage
Add the broth.
Bring to boil and let cook until the pork is cooked through.
Garnish with chopped scallions
(Optional ingredient handful of dry Chinese flour noodles added into the hot broth and cooked until done)
Rinse the Szechuan Preserved/Pickled Vegetable (Zha Cai) if you want to reduce the salt and spiciness.
