Mexican themed soup. It tastes great, is simple and can be scaled for large groups easily. Could be adapted for crock pot if needed as well.
Brown ground beef and onion together. Add salt and pepper to taste while browning. Drain grease. Put all ingredients in a large stock pot, mix thoroughly. Simmer on low approximately 30 minutes to heat through.
When serving, you can add these toppings:
corn chips
shredded mild cheddar cheese
sour cream
hot sauce of choice
Cornbread goes great as a side.
