1 tb Sugar
1 c cheese; Shredded
1/2 ts Salt
1/4 ts Pepper
1 tb Butter
1 lb Ground beef
1/2 c Green Pepper; Chopped
1/8 ts Salt
1/2 c Onions; chopped
2 cn tomato sauce; (8-oz)
1 Garlic; minced
15 Ripe olives; sliced
1 tb Chili powder
1 cn corn; drained; (8.5-oz)
3/4 c Cornmeal
2 c Water

Original recipe makes 8



Brown meat, onion, pepper and garlic in skillet. Stir in tomato sauce. Add rest of ingredients, except cheese. Simmer 15 minutes. Add cheese and stir until cheese is melted. Pour mixture into a casserole dish. Combine cornmeal, salt and water in a saucepan. Bring to a boil and simmer, stirring, until mixture thickens (about 3 minutes). Stir in butter. Spoon over meat mixture in casserole. Bake at 375 degrees for 40 minutes. This is my mom's old 'company' recipe. She had a lot of compliments for it. The hardest part is chopping everything and making the cornmeal topping.

I have been searching for this recipe for the longest time! My mother used to make this dish all the time and not only is it quick and simple, but I believe it is absolutelyTHE BEST tamale pie out there!! Thanks so much!
