This is a delicious and nutritious chili recipe that is vegetarian and very yummy!

1.5 cups Dry Beans (13-Bean Mix)
16 ounces tomato sauce
1 medium onion; chopped
1 medium Aneheim Pepper; chopped
2 stalks celery; chopped
4 patties Veggie Burgers
1 tablespoon olive oil
1.5 tablespoons chili powder
1.5 teaspoons ground pepper
2 leaves Bay leaves
3 cloves garlic; chopped
1 teaspoon salt

Original recipe makes 6 Servings



Prepare the dried beans by covering with water and soaking overnight 8 - 10 hours. Drain and rinse beans. Cover with water and simmer beans until tender (about 4 hours). Thaw veggie burgers. Crumble up the veggie burgers and brown in a pan with the olive oil. Add everything (browned veggie patties, tomato sauce, onion, anaheim pepper, celery, chili powder, ground pepper, bay leaves, garlic and salt), to the beans (do not drain water from the beans). Stir, cover and simmer for 1 hour.


I use Bob's Red Mill 13 Bean Soup Mix for beans and Morning Star Farms Garden Veggie Patties. YUM!
