8 tb Unsalted butter; (1 stick) cut up
2 tb lime juice; Freshly-squeezed
2 tb Shallots; minced
1/2 c White tequila
3 Turns black pepper; Freshly-ground
1 ts Garlic; minced
1/2 ts Salt
1 tb Fresh Cilantro; chopped
1/4 c Heavy cream

Original recipe makes 1



Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately. This recipe yields 1 cup of sauce.
