Preheat oven to 350. Coat a 2 quart glass baking dish with cooking spray.
Combine all ingredients in large bowl. Stir in scallions last.
Spoon into prepared baking dish and bake for 30 minutes.
Remove from oven and sprinkle with 2 tablespoons shredded cheese.
Return to oven for about 10 minutes until cheese melts.
Let stand 5 minutes before slicing.
