A little taste of the southwest! The fresh cilantro and green onion in this dish is what makes it amazing. Versatile dish that can be served many ways!
Warm skillet over medium heat and add chicken, corn, beans, 1/2 of the cilantro and 1/2 of the green onion. Bring up to heat and then add as much salsa as you would like until it is the consistency you desire. Warm through until it begins to bubble. Cover the top with cheese and wait for it to begin melting. Sprinkle on remaining cilantro and green onion Serve hot over bed of tortilla chips. Add some fresh or pickled jalapeƱos and dollop of sour cream!
As stated above, you can really serve this a million ways. You could serve in burritos or tacos or even make a taco salad of it. Kick up the heat a little with some fresh jalapeƱos and then cool it down with the sour cream.
