a delicious recipe my mum got from her thai friend
Remove skin from chicken and discard, cut flesh off bone and cube, break bones.
Add flesh and bones to saucepan with can of coconut milk and can of water & simmer.
Add sugar, salt.
Cut onion in cubes, cut tomatoes in cubes, add to saucepan.
Slice ginger finely & add. Finely cut one of lemon grass, bruise others & tie up before adding to ingredients. Add finely chopped chilli.

Bring to boil.
Add potatoes & sweet potato cut into cubes.
Simmer. Remove chicken bones. Add paste either now or in individual bowls to taste.
Squeeze lime juice and pour into individual bowls. Add serving of soup (& paste) and stir.
Garnish with coriander or eschallots. (Chilli can be added here to taste instead of in soup as a whole.)
Earthkissed 6y agowhen you break the bones you can end up with shards of bones that are hard to get all of them out - requiring you to warn people that there are bones and to have dishes in the centre of the table to put them in. If you prefer - simply don't break the bones! [I posted this recipe.]
