In medium pot over med.-high heat, combine first 7 ingredients. Bring to boil, reduce to simmer and add beans, rice noodles if using and frozen shrimp. If using fresh shrimp I would wait until soup is almost done to add. Top with scallions and cilantro to serve and lime wedge on side.
Crettenberger 4m agoI didn't have any coconut milk, only cream. So I took shredded coconut and added boiling water to it in a blender til it was creamy, then strained it. Worked out perfect. It was fregrent and had a little spice. My husband and I will definitely make it again!!!
