Tasty but doesn't double well


2 cups Chicken breast; sliced in strips
1 can Cream of mushroom soup
1/3 cup Creamy peanut butter
2 tablespoon Soy sauce
2 tablespoon Brown sugar; packed
1 tablespoon Garlic; minced
1/3 cup Peanuts; chopped
2 tablespoon Lime juice
1/2 teaspoon Red pepper; crushed
2 cup Prepared Coleslaw mix
2 tablespoon Cilantro; chopped
1 pound Vermicelli pasta

Original recipe makes 6



Cook pasta according to package directions. Drain. Saute Chicken strips and garlic. Remove and set aside. Add soup, peanut butter, soy sauce, lime juice, brown sugar and red pepper to skillet. Heat to a boil and stir until smooth. Add Chicken and heat through. Remove from heat. Add drained pasta and coleslaw mix. Toss to coat. Garnish with cilantro and peanuts

I used cream of chicken soup.

This recipe is tasty, easy, and fast! I substituted the chicken with shrimp and added stir fry veggies. I also used whole grain linguini pasta, fat free mushroom soup, and natural peanut butter to make it low cal!
