Suggest a better descriptionPlace pork chunks on a large plate in a single layer. Freeze meat until firm and starting to harden around the edges but still pliable, 15-20 minutes. Place half of meat in a food processor and pulse until coarsely chopped, 5-6 one second pulses. Transfer ground meat to a medium bowl and repeat with remaining chunks.
Stir one tablespoon of fish sauce and marinate in refrigerator for 15 minutes.
Heat rice in a small skillet over medium high heat; cook stirring constantly until deep golden brown, about 5 minutes. Transfer to a small bowl and cool 5 minutes. Grind the rice in a coffee grinder to a fine meal.
Bring broth to a summer in a 12" skillet over medium high heat. Add pork and cook, stirring frequently, until cooked half pink and then add one teaspoon of rice powder and continue to cook until pork is no longer pink. Transfer to a bowl and let cool for 10 minutes. Add remaining 1-1/2 teaspoons fish sauce, remaining 2 teaspoons rice powder, shallots, lime juice, sugar, red pepper flakes, mint and cilantro to pork and toss to combine. Serve on top of Bibb lettuce leaves.
