Thai Red Chicken Curry

"This is the second recipe I've ever made in my life. I got on bigoven for motivation to start cooking for myself. I found this fairly easy to shop for the ingredients here in Iowa, USA. The taste of the recipe is similar to what you'd buy at a Thai restaurant here. I didn't have any trouble preparing the dish because you just toss it all into a pan and cook it up. I'm not a picky eater, but I do think this was flavorful."

Ingredients

2 Chicken breasts; cubed
1 clove Garlic; diced
2 tbs Red Thai Curry Paste
30 mililiters Fish sauce
1 tin Coconut milk
2 ea Red bell pepper; sliced
60 milliliters Corriander fresh; chopped

Original recipe makes 4 Servings

Servings  

Preparation

1) Add all ingredients to Wok

2) Cook on gentle heat for 15 - 20 min

3) Add corriander after 10 min

One of my favorites! Real easy to make. I use frozen Thai stir fry veggies instead of just red pepper for the veggies. It's delicious.

I was pleasantly surprised with the outcome of this recipe. I added a pinch of brown sugar for some extra kick and I ran out of cayenne pepper and used Cajun spices. I'll try cayenne next time but I likes the brown sugar. I also added a tbsp of white flour to thicken the consistency. I might add mango next time

Great as good as restaurant when I add cayenne, 1 Tbsp of Splenda pour, 1 can of bamboo shoots and fresh basil ( and I skip the coriander). I serve it over rice.

Had red curry many times in a restaurant ... Can't believe how simple it was. Super tastey and just like I had in the past (wish I had but had boiled rice trying to also cook pad Thai noddles). So popular the family want it again at the weekend,
