Suggest a better descriptionmix egg yolks, mashed potatoes, Parmesan cheese, chives and flour in medium bowl. Roll into walnut size balls. Chill until cold. At least 2 hours.
Beat 4 eggs in bowl. Bread crumbs in second bowl. Pour oil to 1/2 inch in pan, about 2 cups. Heat over medium high until pinch of breadcrumbs bubbles immediately when added.
Dip balls in eggs and roll in bread crumbs.
Working in batches fry, turning often until golden brown and crisp. 3-4 minutes. Drain on paper towels
