So amazing. You can play around with the amounts in the packets if its too salty to your liking.
Heat a dutch oven on the stove to med-high heat. Get it screaming hot. Put down a couple tablespoons EVOO into the pan. Salt and pepper each side of the roast. Sear the roast on all four sides for a couple minutes each. Transfer your roast to the crock pot and turn it on low. Add the red onions and whole smashed garlic to the crock pot. In a liquid measuring cup, pour the three packets: Zesty Italian, Ranch Dressing and Brown Gravy. Then add 1 to 1 1/2 cups of beef stock to the powder and whisk until blended. Pour over the roast. Adding red potatoes and carrots at this point is optional.
Cook on low for 8-10 hours (depending on the lbs of roast).
In a medium to large size pot, bring water to a boil. When the roast is done, remove roast and vegetables to a pan covered with foil and put in oven on warming temp (180). Leave the drippings and liquid in the crock pot. Switch the crock pot on high and add 2 tablespoons butter and let that melt into the juices. Whisk the flour gradually into the juices and butter until well blended. Then slowly add the remaining beef stock into the gravy and whisk until thickened. Once the water in the separate pot has come to a boil, add the bag of noodles and boil, stirring occasionally for 8 minutes. Drain and add the noodles to continue cooking in the crock pot gravy. When the noodles are tender (about 10-12 minutes in the gravy), add the roast and veggies back to the crock. Enjoy!!
