This is very yummy. It's super easy, tastes like pan-fried.
Preheat oven to 425 degrees Fahrenheit.
Melt butter in a 9"x13" x 2" baking dish. I have a large anodized non-stick baking dish that does a great job of giving the 'fried' crust. I melt the butter in the oven while preheating it.
Mix flour, baking mix, and spices of choice. Place in medium paper bag.
Add a few pieces at a time a shake it like crazy, remove one piece at a time and shake off excess, place skin side down in the baking dish. Bake for 20-30 minutes and then turn the chicken pieces. Bake an additional 10-15 minutes more until chicken is done.
Remove to serving platter and enjoy. Yummy.
Note: The basic recipe can be 'spiced' up adding some of your favorite spices. I've changed it by adding one or more of the following: paprika, garlic powder or salt, McCormicks Chicken or McCormicks Garlic Herb etc...
Now that the kids are expanding their palates I have recently "kicked" this one up a bit, every time I make it. I don't want to change this recipe since it's been bookmarked (and I haven't measured the amounts). But I add salt, pepper, smoked paprika, garlic powder, onion powder, crushed rosemary, thyme and when I'm feeling spicy a touch of cayenne! The possibilities are endless. I make it different everytime, depending on my mood.
Also, note that if cooking times need to be adjusted for different cuts of chicken. Enjoy.
