Buttermilk is the key ingrediant to the quick & easy oven fry that turns out mouth watering chicken
The night before: Wash chicken, dry with paper towels. Place in tupperware and marinate in buttermilk, adding tabasco and garlic cloves - marinate overnight.
Preheat oven to 425 degrees - liberally film cookie sheets with olive oil, set aside. Spread panko bread crumbs on wax paper, mix in grated parmeson cheese and Italian seasoning. Remove each piece of chicken and shake off excess buttermilk. Bread each piece thoroughly, and set to rest on a separate piece of wax paper or a cookie rack to rest for 5-10 minutes. Season with garlic salt and pepper and dust with paprika. Place each piece on oiled cookie sheet, lightly spray tops of chicken with Pam. Oven fry for 35-40 minutes, depending on your oven. Rest chicken about 10 minutes after removing from oven. Serve, nice with a green salad, corn on the cob etc.
