My mother taught me so much in the kitchen. She is quite the talented cook even if she only cooks for the family. Growing up I use to love when she made her beef stew. A few days ago I fancied beef stew, so I asked my mum for her recipe. (I live in England now and she still lives in South Africa) The only variation is that my mum would put it all on the slow cooker in the morning, but I made mine on the stove


Ingredients

450 grams Stew meat; Chopped into bite sized pieces
1 small Onion; Finely diced
3 Potato; Chopped into bite sized pieces
1/2 Butternut squash; Chopped into bite sized pieces
4 medium Carrot; Chopped into bite sized pieces
1 can oxtail soup

Preparation

Place a pot on a medium heat on the stove.

While it is heating up, Dice the onion.

Place in the pot with a little oil and brown

Chop your meat into bite sized pieces

Place in pot with onion and brown

Chop up your veg

Place this in the pot once the meat has browned

Pour the can of oxtail soup into the pot (you can use a packet soup with water as well)

Add a little extra water to cover the meat over

Bring the pot to just below boiling point.

Cover the pot and leave on a low to medium-low heat for about 1 hour (I put it on a medium heat for 30 mins but did half the portion)

A larger pot may require slightly longer cooking time.

Once all the meat and veg has been cooked until nice and soft, check your sauce isn't too runny.

If it is, remove the meat and veg from the pot and thicken the sauce with a bit of cornstarch and water.

Put the meat back in the pot and bring it back up to temperature.

At this point your stew is ready to serve, but I added dumplings to mine with a packet dumpling mix. I like to make my dumplings into bit sized balls. Add them to the top of the stew and cook for a further 20mins (or as packet instructions guide)

Once done, ladle into a bowl and serve with some fresh warm bread or into Yorkshire puddings.

NOTE: You can add any other veg you want, root veg, like parsnip, go very nice with stews as do courgettes, squash, patti pans, peas and corn, even mushrooms. Go Wild

Notes

Try to give it a stir every 10-15mins so nothing sticks to the bottom of the pot or burns (unlikely on a low heat)

At the most this will take is 2hrs and most of that will be sitting back with a glass of wine waiting. lol
