You won't believe the "special" properties that Mayo offers....

"I used part Parmesan, part provolone for the cheese because I didn't have 1/4 a cup of Parmesan, but it turned out fantastically! I also didn't have Italian bread crumbs either, so I used Panko breadcrumbs with a combination of Italian seasonings I had on hand. The extra fat and stuff from the mayo will go to the bottom of the pan, so only put the mayo and bread crumbs on top to keep it from getting soggy, or use a metal rack to keep the drippings away from the chicken. "


4 boneless, skinless chicken breasts
1/2 cup mayo
1/4 cup grated parmesan cheese
4 tsp italian seasoned bread crumbs; (panko bread crumbs are best, they have a real crunch to them)

Original recipe makes 4 Servings



1. Preheat oven to 425

2. Combine mayonnaise with cheese in medium bowl.

3. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.

4. Bake 20 minutes or until chicken is thoroughly cooked. **if you have not flattened your chicken breast prior to this, you will need to cook it about 35-40 minutes total, thicker breasts take longer to cook**

**I will usually sprinkle a little bit of italian seasoned bread crumbs on top of the mayo, then sprinkle some panko on top of that, it really makes a nice crunch**

I was looking for a recipe to recreate Longhorn Steakhouse's Parmesan Crusted Chicken and tried this but I must say, this recipe may be BETTER than Longhorn! Adding this to my favorites for sure! Thank you for sharing!

It isn't mind blowing, but it is easy. I did it twice, the second time pounding the chicken down a bit, which made the twenty min cook time perfect. You DON'T need a thick layer of mayo parmesean, and I actually cut the mayo down by half. Next time i think I'm going to use 3 tbsp of parm. too.
