Ingredients

Are you making this? 
3 medium red potatoes
2 small onions
2 medium carrots
4 roma tomatoes
4 stalks celery
2 cups rotini
2 cups baby spinach
1 can canelli beans
1 can kidney beans
1 can black eyes peas
1/2 cup basil pesto
2 boxes vegetable broth; 32 oz
4 cups water
1.5 teaspoon minced garlic
1/3 cup parmesan
2 dashes rosemary
salt
pepper

Original recipe makes 8 Servings

Servings  

Preparation

Wash and chop potatoes, onions, carrots, tomatoes and celery.

Bring vegetable broth and water to boil and add chopped vegetables and garlic. Add salt to taste.

Simmer vegetables until tender. Add rosemary.

Add rotini and cook for 10 minutes or until al dente.

Add beans, spinach, pesto, and parmesan. Simmer a few more minutes.

Add salt and pepper to taste.

WOW!! The pesto makes this dish. Unbelievable flavor. My only thing I changed was used a bean medley, as couldn't find all the beans. Next time might add, as well, a bit more stock. Overall, amazing recipie??
