Three Bean Salad

aka drieboontjieslaai - this salad is always better if prepared the day before and improves with age - it will keep for at least four days in the fridge


1 tin butter beans
1 tin green beans; (french cut)
1 tin baked beans; (in tomato sauce)
1 medium green pepper; (finely chopped)
1 medium onion; (finely chopped)
125 ml white vinegar
125 ml sunflower oil
4 tbsp brown sugar
2 tbsp basil; (dried)
2 tsp dry mustard powder

Original recipe makes 6 Servings



Drain the beans, rinse and tip into a serving bowl. Add the green pepper and onion and mix well. Combine all the dressing ingredients in a small bowl and mix well to dissolve the sugar. Pour the dressing over the beans and mix well. Cover and store in the fridge.


If possible try and use Colmans Hot English Mustard powder as this definitely gives the best taste.
