Ingredients

1 1/2 c jack cheese; Shredded
1 10-oz package spinach; chopped, thawed
1/2 c Cheddar cheese; shredded
1/2 c Feta cheese
1 pk Frozen puff pastry
1/2 c yellow onion; Diced
3 Eggs
Salt and pepper
1 c Heavy cream
1/2 c roasted red peppers; Chopped

Preparation

Directions: On a lightly floured surface, roll out 1 sheet of thawed frozen puff pastry to 1/4 inch thick. Place in a 9" pie plate and fold the edges under. Prick the pastry with a fork, then bake at 400 degrees for 10-12 minutes. Let cool. Sprinkle the onion, jack cheese, and cheddar cheese into the baked pastry shell. In a mixing bowl, combine the thawed spinach, cream, eggs, salt and pepper. Mix well. Pour the mixture over the onion and cheese. Top with the red peppers and feta cheese. Bake uncovered at 350 degrees for about 50 minutes until set. Let cool slightly and serve.

Puff pastry is the issue with this recipe. Baking it for a short as it recommends before adding the filling ended up being gummy and gross in my glass pie plates. The flavor is awesome, but none of us could get past the nasty texture of that puff pastry. Will make with normal pie crust next time.
