Ready in 40 minutes
It is an easy and healthy recipe.
Preheat the iron skillet with the oil.
Roast the garlic and tomatoes. Stir in the butter and white wine and season with salt and pepper.
Place the fish fillets in the iron skillet.
Cook fish for until about halfway done. Pour the tomato sauce over it and let the wine evaporate.
Complete cooking until fish flakes easily with a fork.

MinnaPepina 3y agoThe comments in this made me laugh so hard, Even I know how to roast tomatoes and I'm a joke in the kitchen! Anyway you can BUY canned roasted tomatoes if you don't have the time and this recipe was AMAZING!
Brbess26 3y agoSimple and easy! I used a can of diced tomatoes because I didn't have fresh ones, and added a little diced onion. Tasty!
mquattlebaum 3y agoWHAT? How do you roast tomatoes? Maybe that should be included in the recipe so people know how to do it. I put everything in the pan at the same time...sure hope it works out!! Specify next time that you have to put the tomatoes and garlic in something else before it gets added to the pan.
SnowBengal 3y agoI didn't have any regular tomatoes so I substituted Italian style stewed tomatoes and wow!! This recipe is excellent, this will become a weekly meal!!!!
