Ground beef chili
Heat 2 tablespoons oil in a large, heavy pot over high heat. Add beef and cook until browned. Drain off excess juice leaving a about 1/2 cup. Transfer meat to a bowl and set aside.
Add remaining oil to pot and cook onions and red peppers over high heat for about 4 minutes, stirring constantly. Turn down heat to low, add garlic, jalapenos and all spices, and cook for 15 minutes. Stir frequently.
Return beef and reserved juices to pot. Add flour, vinegar, tomato paste, diced tomatoes and tomato juice and bring mixture to a boil, then reduce heat and simmer for 20-30 minutes.
Add chicken stock and diluted bouillon and simmer for a minimum of one hours (longer if time permits). Salt and pepper to taste. Garnish with cheddar cheese and onion if desired.
Is a bit of a pain to prep but worth it. Helps to have everything measured and ready to go before you start. Do not substitute or skip the red wine vinegar! You can use regular flour if you do not have Wondra or another finely milled flour. Great the first day, wonderful the second! Trust me on the bouillon cube! It adds just the right amount of depth to the recipe. 2 jalapenos makes it mild - 3 spicy.
