Note: when made, i found the custards to be too much, the ladyfingers to be too little and the liquor overpowered the flavor. Use less wine, cut custards in half and top with mocca and dark chocolate curls. the custard never reached 160 degrees but still seemed to set up.
Whisk 1 1/2 cups marsala, 3/4 cup sugar and yolks in large metal bowl over simmering water. Using a portable mixer, beat mixture until candy thermometer registers 160 degrees (about 15 minutes) Remove bowl from water set zabaglione aside
Combine hot water and espresoo powder in large bowl: stir to dissolve Add mascarpone cheese and remaining 3/4 cup sugar and beat to blend
Cover bottom of 9x13x2 inch glass baking dish with single layer of ladyfingers, flat side up. Brush 1/4 cup marsala over. Spread 2 cups mascarpone mixture over ladyfingers. Tope with 2 1/2 cups zablione. Arange another layer of ladyfingers over zabaglione flat side up Brush with 1/4 cup marsala Sjpread remaining mascarpone mixture over Cover with remaining zabaglione Sift cocoa over Cover and chill at least 6 hours (Can be made 1 day ahead)
Cut tiarmisu into squares and transer to plates
*Italian cream cheese available at italian markets and some specialty foods stores. If unavailaable, blend 1 pound csream cheese with 6 talablesppons whipping cream and 1/4 cup sour cream. Use 2 cups packed miture for recipe
