1. Place an oven rack in the center of the oven and preheat to 400 degrees.
2. Arrange bread halves on a baking sheet and drizzle with olive oil. Bake until light golden, 13 to 15 minutes. Cool for 2 minutes.
3. Rub warm bread with the cut side of the garlic.
Shrimp:
1. While the bread is baking, heat oil in a large skillet over medium-high heat. Add shallot and garlic. Cook, stirring frequently until soft, about 2 minutes.
2. Season shrimp with salt and pepper. Add to the skillet. Cook until just pink and cooked through, 3 to 4 minutes. Remove shrimp to a cutting board.
3. In the same skillet, add tomatoes. Season with salt and pepper. Cook over medium-high heat until tomatoes start to soften, about 4 minutes.
4. Cut shrimp into 1/2-inch pieces.
5. Adjust the heat to high. Add wine, and using a wooden spoon, scrape up the browned bits that cling to the bottom of the pan. Boil for 2 minutes. Add broth and boil until most of the liquid has evaporated, about 2 minutes. Remove the pan from the heat.
6. Add shrimp, tarragon, arugula, and mascarpone and stir until mixture is creamy. Season with salt and pepper.
7. Spoon creamy shrimp and sauce over bread. Sprinkle with salt and pepper.
8. Cut into slices and serve.
