Quick, tasty, Thai style soup/stew.
In a large pot, add the onion and vegetable oil. Saute on medium heat.
In a bowl, mix the Mince with cold water to stop it chunking. Add all ingredients except the Coleslaw mix to the large pot, bring to the boil and allow to simmer for 15 minutes. Add the Coleslaw mix (optionally the additional Bean Sprouts) and cook for a further 15 minutes.
Serve with rice or toasted sourdough bread.
