It's quick, easy, and warming . . . While chipotles add smoky flavors to dishes, these dried jalapenos also pack a little heat. You may need to adjust the amount to your liking."
Melt butter in a large pot over medium heat. Add onions and cook 3 minutes. Stir in garlic, chipotles, and adobo sauce; cook 1-2 minutes. Stir in flour and cook 1 minute.
Add broth and tomatoes; bring to a boil. Reduce heat to a medium-low and simmer soup 30 minutes. Remove soup from heat and puree with a blender until smooth.
Stir in chopped cilantro and season soup with salt and pepper. Garnish each serving with tortilla chips, sour cream or guacamole, and cilantro.
Makes 5 servings (10 cups): Nutrition per 2-cup serving: 215 calories, 9g. total fat, (6g. sat.) 24mg cholesterol, 841mg sodium, 27g carbs, 7g fiber, 5g protein.
