Tomato Salmon Patties
INSTRUCTIONS
1. In a medium bowl, lightly beat the eggs. Add the salmon, ground flaxseed, miso and 1/4 cup of the green onion. Mix well to thoroughly combine and form into 4 patties. Patties will be a little wet.
2. Spray a large skillet or saute pan lightly with olive oil and place over medium heat.
3. Arrange the salmon patties in the pan. Add the wine to the open can of tomatoes and stir gently with a fork to incorporate. Pour the tomatoes over the salmon patties, cover and cook for 20-30 minutes or until patties are cooked through. (an instant red meat thermometer should read 160 degrees F). Reduce heat if tomatoes sputter. Stir the remaining 1/4 cup of green onions and cilantro into the tomatoes and garnish each patty with a lemon wedge.
