This could be make up for many different dishes such as pasta, pizza, bolognese sauce, lasagna, spread, mince pie, stew, dipping, soup etc. It minimize your time for cooking all sorts of delicious food. Try to cook a big batch of this sauce and freeze it which could be kept for a couple of months.
1. In a large sauce pan slowly fry the onion, garlic, carrot, dried oregano and the chili with a pinch of salt and olive oil. Cook for about 5 minutes until the vegetable had soften, then add the tins tomatoes and the bay leaves and let it simmer on the hob over a gentle heat for around 30 minutes.
2. Give it a good stir occasionally to avoid it catch the bottom of the pan and break and mush the tomatoes up with a wooden spatula.
3. Season the sauce really carefully with salt, black pepper, sugar and soy sauce. At this point it's nice to puree the sauce using either a food processor, a liquidizer or a hand-held blender. Congratulation! You now have a beautiful ready made pasta sauce or whatever sauce you like to name it. Allow it to cool, bag it up and freeze it, or use it straight away.
