Suggest a better description1. Sweat onions and celery in olive oil. When soft, add garlic and cook for 20 seconds. Add remaining ingredients.
2. Bring to a boil, stirring often. Reduce heat and let simmer over medium heat, stirring frequently, for 1 hour.
3. Transfer to a cambo, and pulse briefly with the immersion blender.
4. Sauce should not be completely smooth.
