sweet yummy homemade tomato soup
Method
1. Peel and slice sweet potato. Add sweet potatoes, tomatoes (with juice), and stock to a medium sauce pot. Season with salt and pepper.
2. Bring to a boil. Reduce heat to a simmer and cook until potatoes are tender, about 30 minutes.
3. Puree soup in blender until smooth. Strain through a medium strainer if necessary.
4. Garnish with a dollop of plain yogurt or sour cream.
5. Serve with grilled cheese sandwiches cut into shapes with cookie cutters.
