Fragrant long grain rice delicately flavored with green peas, cumin and other spices
Method:
1. Wash the rice and drain
2. Heat ghee in a pot on medium to high heat and fry the cumin seeds to 10 seconds
3. Add cloves, bay leaves and cardamom pods and gently fry for 20 seconds stirring the spices.
4. Add the sliced onions and fry until light brown
5. Stir in the mixed vegetables and cook for about 1 minute
6. Add the rice and mix, water and salt and bring to a boil. Taste the water for salt. Add more if necessary. Cover and simmer for 12 minutes on low heat or until all the water is absorbed. DO NOT OPEN THE LIDE FOR 12 MINUTES!! (note: Raphael :-)
7. Transfer to a serving platter and serve warm with a vegetable or curry
