Triple chocolate mousse with a raspberry coulis.
Whip the 1/3 cream until firm, and beat in 1/3 the icing sugar.
Melt ONE type of chocolate until runny, and beat 1/3 of an egg into it.
Mix this into the cream, and cut into circles, then chill.
Repeat with the other two types of chocolate.
When the mousses are finished, make the raspberry coulis by putting the raspberries into a small saucepan on a medium heat. Add a pinch of sugar. Sieve to remove the seeds.
Once the mousses are cooled, put the three circles on top of each other, and pour on the coulis. Serve with a peice of shortbread.
