Suggest a better description1. Melt butter in heavy bottomed sauce pan. Stir in flour and make a roux. Cook on medium heat for a 2-3 minutes then remove from heat.
2. Stir in cold milk. Turn heat on to medium high and simmer for 4-5 minutes until thickened. Remove from heat and add cayenne, nutmeg, and pecorino.
3. Chop cauliflower into large chunks. Boil in salted water for 6 minutes. Drain.
4. Arrange cauliflower in 9x13 dish. Pour cheese sauce over cauliflower. Sprinkle breadcrumbs and parmigiano reggiano over the top.
5. Bake uncovered at 425 degrees for 30 minutes.
