Combine all ingredients except tuna in a saucepan. Cover and simmer 5 minutes. Uncover and continue to simmer 6-8 minutes until vegetables are tender and juice has evaporated to a thick sauce. Drain tuna liquid into sacepan. If tuna is solid pack break into chunks. Stir tuna into the tomato mixture. Simmer until tuna is hot.
