Perfect for using up leftover ham and turkey from Christmas or Thanksgiving. This is one of the recipes I got from my mother-in-law when I first moved over here.
.Melt butter in a large pan, add the sliced leeks, cover and leave to cook for 10 minutes
.Blend dry cider and plain flour.
.Remove leeks from pan and pour in cider mixture. Heat until thickened, then remove from heat and stir in leeks, diced turkey, diced ham, apples, and peppercorns.
.Add double cream and put into a deep pie dish. Make a lid with the puff pastry and use to cover the pie. Brush with beaten egg.
.Bake at 160C for 40 minutes until the pastry is golden.
