This soup is a little hot and not too salty. Add salt as needed per taste. Got rave reviews from the men.
Put turkey loins in a covered pan in the oven and cook until done (per directions on the package). Chop onions and place in prep bowl alone. Add all salt, toss and let "sweat" for at least 10 minutes. Meanwhile chop remaining ingredients pairing the ingredients in prep bowls as follows. Celery plus parts bok choy in one bowl, mushrooms in one bowl, carrots alone. bok choy greens alone. Add olive oil to VERY large pot with temperature on high. Throw sweated onions into pot once oil is hot. Once brown bits start to form, de-glaze with apple juice. Continue the process of allowing brown bits to form while de-glazing over and over until juice of first box of juice is gone. Add in all carrots and continue to de-glaze and brown process until 1/2 of second box of juice is gone. Add sherry, mushroom and diced chilies and continue on high, stirring constantly. Add remaining apple juice and reduce, stirring constantly. Add 1/2 box turkey stock and boil ingredients in order to soften carrots. Check texture of them. Once carrots feel 1/2 hour away from being done, add remained stock and rice. Remove turkey from oven. Drain grease and cover turkey with foil to let stand. At this point you can up some Ciabetta bread and cheddar cheese to be ready for last minute grilled cheese. Dice turkey into 1/2 inch cubes and toss into soup along with the bok chov greens. Turn off heat and cover. Make grilled sandwiches by spraying coconut oil on pan side of bread and make cheddar grill sandwiches. Serve immediately.
