Every year after Thanksgiving, we enjoy this soup, made with left over Turkey. In fact, we long for this soup so that sometimes, we will just make it, holiday or not!
We used a store brand package of Long Grain and Wild Rice Mix, the original recipe calls for Uncle Ben's Mix. It is still delicious.
Heat the olive oil in a large skillet and saute the mushrooms and onions over medium high heat until they are golden and the onions are tender.
Stir in the turkey (reserve the rice mix seasoning packet till the very end) and add the broth.
Bring to a boil, reduce heat, and simmer for about 20 minutes, until the rice is cooked.
Stir in the cream or half and half, NOW is the time for the seasoning packet!) heat through and serve.
