Sauteed sausage, tomato, avacado with hollandaise sauce
Spray skillet with olive oil spray
Over a medium high heat, cook crumbled turkey sausage for about 5 minutes, or until lightly browned
Add chopped tomatoes and cook for 2 more minutes
Add chopped avocado during last minute of cooking - or - add uncooked avocado to the cooked turkey and tomato
Top with 2 tablespoons Hollandaise Sauce
Hollandaise Sauce:
Combine egg yolk and water in the top of a double boiler that is over a medium-low heat
Simmer until mixture has tripled in volume, about 3 minutes
Add melted butter in a slow steady stream, whisking constantly until sauce thickens
Whisk in lemon juice, salt, pepper.
Serve immediately.
