This is how I take care of the turkey carcass. But you can make this soup by following the directions and using 12 cups of chicken broth with 1/2 teaspoon of poulty seasoning. You can freeze the carcass and make the broth when convenient for you.

Put the turkey carcass in your slow cooker at Low with an onion, celery stalk,a carrot, salt and pepper,bay leaf, 1/2 poultry seasoning, 2 tblsp chicken powder and water.
Cook on Low overnight.
Next morning, strain the both and pour it back in the slow cooker.
Remove turkey meat from bones, set meat aside.
In the slow cooker with the broth, add onions, garlic, carrots, celery, thyme, salt and pepper.
Cook at High for 4 hours; add reserved turkey and noodles.
Cook another 1/2 hour.
Cooking time doesn't include the overnight that your broth is cooking.

smatthews24 4 months agoDelish. My husband and I really enjoyed this. I added a half cup of rice instead of noodles. Good way to use left over Turkey.
joyleigh 10 months agoI made this today:) I added fresh chopped dill and parsley. Lemon juice and tobasco to taste. 1 can of tomato juice. A dash of ketchup. I used white long grain rice... about 2 cups. No noodles. Next time I will also add 1 cup of white wine and 1 green pepper. I didn't have any in stock in my kitchen...( my dad was a chef in the coastguard... so I intertwined his turkey soup recipe). It came out fantastic. I notice most turkey soup recipes do not say to use cheesecloth when making the broth with the carcuss.... I recommend doing so! No bones will fall into the broth. I will definitely be making this yummy soup again!!!
kitchenstadium 1 year agoThis was quite good, and easy to flavour to your own tastes. I added chunks of potato, whole wheat macaroni and a variety of spices.
