Vegetarian version. Very fast and easy
In large pot, heat oil. Add garlic and onion; saute until soft. Add kale and cook until wilted. Add 3 c. broth and 2 c. beans, tomatoes, herbs, salt & pepper. Simmer 5 min.
In food processor, puree remaining beans and broth until smooth. Stir into soup to thicken. Stir in 2 T. grated Parmesan (if desired). Ladle into bowls and top with parsley.
