Good to use food processor. Soak beans the night before. Soup keeps in refrigerator 5 days and freezes well.
Soak beans over night and drain. Bring the beans, water, salt and peppercorns to boil in a large kettle over medium heat: adjust the heat so that the water bubbles gently and cover : cook until the beans are very soft, about 2 hours. Meanwhile, in food processor, coarsly chop the parsley with the metal chopping blade, using 2-3 5 second pulses. Scrape chopped parsley into fine sieve, and rinse, also rinsing out bowl and pouring it into sieve. Dry parsley into several thicknesses of paper towel and twist out moisture: refrigerate . Sauté bacon pieces on mod low heat until crisp and brown, remove and add olive oil to this kettle. Churn garlic in food processor 5 sec, scrape bowl, then add onions and coarsly chop ( 1-2 5 seconds). Add these to kettle with olive oil and bacon drippings and toss to glaze. Do same. To carrots, and add to kettle, along with sage, thyme Nd bay leaf.. Sauté over med. heat, stirring occasionally, until onions are golden (about 8-10 min). Mix in tomatoes and liquid , lower heat to low and do not scorch while beans Finnish cooking. When beans are soft, add 2+cups of beans to tomato mixture. Cool rest of beans for 10 min, then purée wi remaining cooking water (10-15 sec). Add this purée to tomato and whole bean mixture, adding also parsley and bacon bits.
Use second largest kettle to cook beans and largest one to sauté bacon.
