This is a very easy dish to make, and it taste wonderful..its a perfect side dish if your grilling or need something tasty and pretty quick. Its very easy to double the recipe too.
your supposed to start off with a baked potato.. I baked my potato in the microwave first to cut down on time. ( using a fork , poke holes into each potato so the steam can escape while they are in the microwave) place a napkin under the potatoes to absorb water.. place in to microwace safe bowl and cook potato according to your microwave settings.. (mine was 4 min per 2 potatoes) after baking the potatoes i sliced them in half lengthwise and went to the next step.
1. Preheat the oven to 350°F. While waiting for the oven to heat, use a spoon to scoop the flesh out of each potato half into a bowl, leaving about 1/4 inches of flesh attached to the shell. Arrange the shells upright on a baking sheet and set them aside.
2. Mash the potato flesh until smooth. Stir in the cheddar, sour cream, buttermilk, butter, and scallions and season with salt and pepper to taste.
3. When the oven is hot, put the sheet of potato shells in and bake for 10 minutes, until they are dry and slightly crisp. Remove the shells from the oven and increase the temperature to 500°F. Carefully spoon the potato mixture into the shells. Bake the stuffed potatoes until they are slightly brown and crisp, about 15 minutes. Allow to cool for 10 minutes before serving.
