1 cucumber; Unpeeled, chopped
1 ts Salt
1 Clove garlic; crushed
1/2 c olive oil
1 pt Plain yogurt
1/2 lemon, Juice of

Original recipe makes 6



parsley To the yogurt add the cucumber, garlic, olive oil, lemon juice, and salt. Blend well with fork. Top with parsley. Refrigerate. Serve with Melba toast as first course or as a side dish during dinner.

This is easy to make. I used home made yogurt and double the garlic.

I used a little less than 2 cups of yogurt & added about 3/4 cup of sour cream. We love garlic so I used 3 cloves. I didn't add olive oil, but added about 1 tsp of dried dill & 1 1/2 Tbsp of lemon juice. AWESOME!!!!
