1 Tbs Vegetable oil
6 ounces beef top round
1 leek
1 Ginger
2 1/2 cups Water
2 Tbs miso paste, medium color
1/4 teaspoon sansho pepper
2 pieces konbu
4 dried shitake mushrooms
3/4 cup mirin
1/3 cup Sake
1 1/2 teaspoons Sea salt
1 1/4 ounces bonito flakes
