Rich mocha flavored layer cake
1) Make the tortes. Heat oven to 350 degrees. Butter the bottoms of two 10 inch cake pans, line with circles of parchment. Butter paper and pan sides set aside
2) Combine ground walnuts, flour, corn starch and baking powder Set aside.(Bowl A)
3) 12 egg whites and 1/4 tsp salt in large mixing bowl Beat to stiff peaks set aside (Bowl B)
4) 12 egg yoks and 1 1/4 cup sugar and 2 tsp vanilla Beat med-high until thick and fluffy approx 5 min (Bowl C)
Sprinkle contents of bowl A over Bowl C then fold in egg whites (bowl B)
Mocha Frosting:
Beat 3/4 cup butter, 6 ounce melted chocolate 1 tsp vanilla and 1 1/2 cup confectioners sugar until creamy slowly add coffee liqueur 3/4 cup coffee and 4 1/2 cups confect sugar beat until fluffy set aside
Whip cream filing:
beat 2 cups heavy cream 1/4 cup confectioners sugar and instant coffee granules
Layer torte cream filling torte cream filing Frost refrigerate until serving
