A hearty chili perfect for any occassion
Step 1:
Put olive oil in a large pot (size that you would use for spaghetti) While oil is heating, dice the onion into small pieces and mince the garlic. Place garlic in oil when warm, and then place the onions in the hot oil to brown them a little bit. Then place the ground beef in the pan and begin browning it. At any time, stir the hot sauce into the ground beef. Break the ground beef into very small pieces. Immediately as the beef is brown, proceed to step 2.
**Note: You may or may not drain the beef. Most cases I do not.
Step 2:
Pour the stewed tomatoes, beans, and corn into the pot and stir on medium heat. You will see the chili become more soup like as the tomatoes release their juices and stew down. Check the beans to see if they are getting done. When the beans are soft enough to eat, reduce the heat to between medium and low and proceed to Step 3.
Step 3:
I've never taken actual measurements, but this is what I do!
Add 2 large pinches of garlic powder
Add 2 large pinches of red pepper flakes
Add 2 large pinches of black pepper
Add 1 large pinch of white pepper
Add 1 large pinch of cayenne pepper
Add 2 large pinches of hot mexican chili powder
Add 1 pinch of salt
Stir the spices into the chili, you should see it start to darken up. Taste it as it goes to see if it's spicy enough but beware it gets spicier the longer it simmers!
Let simmer on low heat for at least 1 hour.
Step 4:
Now you can add more spices if you choose. Let chili simmer for about 20 minutes before serving.
Simmer for at least one hour after adding spices!
Don't add spices until beans are done!
